What do rock candy and space science have in common? A lot more than you might think! The NanoRacks-NSL Satellites Ltd-Rock Candy in Space experiment transformed a childhood treat into a powerful science lesson. Aboard the ISS, astronauts cultivated sugar crystals — commonly known as rock candy — to explore how crystal growth behaves in microgravity. In space, where gravity doesn’t pull molecules downward, crystals form more slowly and symmetrically, often growing larger and purer than on Earth. This experiment was a fun and accessible way to demonstrate real-world chemistry and materials science concepts to students, showing how everyday phenomena can unlock serious scientific insights. The lessons from this sweet experiment go beyond dessert: they help scientists better understand processes used in manufacturing semiconductors, pharmaceuticals, and even spacecraft materials.
